Ingredients:
- 2 ripe yellow or white Georgia peaches, thinly sliced
- 1 pint heirloom cherry tomatoes, halved
- 1 ball (8 oz) fresh mozzarella cheese, roughly torn
- 1/4 cup fresh basil leaves, whole or roughly torn
- 2 cups chopped romaine lettuce
- 2 cups fresh spinach
- 2-3 tablespoons Benissimo Balsamic Garlic Oil
-
Assemble the Salad: In a large serving platter, layer the chopped romaine lettuce and fresh spinach first.
-
Next Layer: Arrange the sliced peaches in a single layer over the bed of greens. Scatter the halved cherry tomatoes over the peaches.
-
Mozzarella and Basil: Gently tear the mozzarella cheese and distribute it evenly over the salad. Scatter the fresh basil leaves around the platter, leaving some whole for a beautiful presentation.
-
The Dressing: Drizzle the balsamic garlic oil generously over the entire salad.
-
Finishing Touches: Finish with a final grinding of fresh black pepper or your favorite parmesan cheese (optional).
Tips:
- For an extra touch of sweetness, drizzle the peaches with a teaspoon of honey or maple syrup before assembling the salad.
- For a vegetarian option, simply omit the mozzarella cheese.
- This salad is best served immediately, while the peaches are still fresh and juicy.
- Leftovers can be stored in a covered container in the refrigerator for up to 2 hours, but the texture of the peaches will soften. Consider making a smaller batch for the freshest flavor.
Enjoy this delightful taste of Georgia summer with the added textural contrast of the greens!
